Title: Monk's Cheese Soup

1/4cMinces onions
1/4cButter
1/4cFlour
2cBroth
2cMilk
1 Carrot; sliced very small
1 Celery stalk
  Salt & pepper
  Oregano leaves
  Thyme
3/4cGrated cheese
1mdPotato peeled & diced

Melt butter & brown onions lightly over low heat. Add flour stirring continuously. Add broth & milk or only milk + herbs. Bring to a slow boil, put in food processor, bring back to stove then slowly add cheese until cheese melts stirring continuously. Sprinkle with paprika & croutons. Serves 6 portions.
